Ingredients

For the potato mash

  • 1 kg of potatoes (approximately 5–6 medium potatoes)
  • 50 g of butter
  • 100 ml of milk
  • Salt to taste
  • Pepper to taste
  • 1 egg (to provide consistency and help seal)

For the meat filling

  • 500 g of ground meat (beef or a beef and pork mix)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 grated carrot (optional)
  • Salt and pepper to taste
  • 1 tsp sweet paprika
  • 1 tsp cumin (optional)
  • 2 tbsp olive or vegetable oil
  • 50 g of shredded cheese (optional, for melting)

For assembly and baking

  • 1 beaten egg (for brushing)
  • Breadcrumbs (optional, for a crunchy coating)
  • Sauce of your choice (tomato, cream, or mushroom)

Instructions

  1. Prepare the potato mash: Wash and peel the potatoes. Cut them into uniform pieces and boil in salted water until tender (approximately 15–20 minutes). Drain well and mash until smooth. Mix in the butter, milk, salt, and pepper until creamy. Stir in one egg to make the mash malleable for shaping. Let it cool slightly before assembling.
  2. Prepare the meat filling: Heat oil in a large skillet and sauté the onion until translucent. Add the garlic and cook for one more minute. Add the ground meat and cook until browned and well done. Stir in the grated carrot, paprika, cumin, salt, and pepper. Cook for 5–7 minutes until well integrated and moist, but not liquid. If using cheese, stir it in until melted.
  3. Assemble the roll: Place plastic wrap on a flat surface. Spread the potato mash into a rectangle, approximately 1–2 cm thick. Place the meat filling in the center, leaving 2–3 cm of space at the edges. Carefully roll the mash over the filling using the plastic wrap to help. Gently press the ends to seal.
  4. Bake: Preheat the oven to 200°C (390°F). Carefully remove the plastic wrap and place the roll on a baking tray. Brush the top with beaten egg and sprinkle with breadcrumbs if desired. Bake for 25–30 minutes until the surface is golden brown. Let it rest for 5–10 minutes before slicing.

Serving Suggestion

Cut the roll into slices of 2–3 cm. Serve accompanied by tomato, mushroom, or cream sauce, and garnish with freshly chopped parsley.

Maintain Mash Consistency: Avoid adding too much milk so the mash remains firm enough to hold its shape. The egg is essential for stability.

Manage Filling Moisture: Ensure the meat filling is juicy but not overly liquid, as excess moisture can cause the potato roll to break apart.

Use Plastic Wrap: Using film during the rolling process is the secret to achieving a uniform cylinder without cracks.
